The Romans once revered the walnut as the ‘acorn of Jupiter’ and spread it throughout Europe. This powerful fruit, valued since ancient times as food for the heart and brain, combines historical heritage with contemporary cuisine. In the Dauphiné region, the Berger family cultivates their walnut trees according to traditional methods and harvests the omega-3-rich nuts by hand. Lucie Fischer-Chapalain explores the culinary side of the nut: she transforms unripe, green walnuts into a velvety black ice cream and conjures up a rustic focaccia with roasted walnut kernels. She also tests which nutcracker is most effective at getting to the soft kernel of the fruit.
