As a staple food, delicacy, or even collateral in Italian banks, few foods combine so much tradition, craftsmanship, and economic significance. In Montafon, dairyman Daniel Mangeng cultivates the ancient art of Sura cheese making, while Sébastien Beaury in Touraine tends to his goats and produces the famous Sainte-Maure cheese roll using traditional methods. Lucie Fischer-Chapalain discovers the culinary versatility of this food in the kitchen studio: she composes grilled cheese with Mediterranean vegetables and refines spicy cheese muffins for a charcuterie board – a delight that combines traditions.
