At the table with Lucie - Kitchen Hacks - Herbs of Provence
Rosemary, thyme, savoury, basil, marjoram and oregano - the classic blend of herbs from Provence is world-famous for its intense fragrance and its many uses in the kitchen. They became famous thanks to an American chicken recipe, of all things. Surprisingly, only around ten per cent of the herbs in many supermarket spice blends actually come from Provence. The Goret family from Saint-Rémy-de-Provence grows different varieties of thyme. Lemon thyme goes particularly well with fish, while carvacrol thyme lends a spicy flavour to meat dishes in particular. In her kitchen, chef Lucie shows you how to bake your own herb baguette, whip up lavender butter with yoghurt and pickle salmon with Provençal herbs.
