From the hot Brazilian sugar loaf to the world's most popular cocktails, sugar cane has left a lasting impression on cultures and societies around the world. The plant, which can grow up to six meters high, was once as valuable as gold and drove colonial trade. With an annual harvest of 1.92 billion tons, it is still one of the most important agricultural commodities in the world today. In Cuba, the “machetero” Argelio Marrero Perez has been harvesting sugar cane by hand for 30 years. His family processes the sweet stalks into delicious desserts such as caramelized papaya. In her kitchen, chef Lucie Fischer-Chapalain shows us how to refine cucumber syrup with star anise, make our own vanilla sugar and create a light and airy pavlova with fresh fruit.
